Paleo Baking is a style of baking that follows the guidelines of eating a paleo diet.

A paleo diet typically includes foods that were originally eaten in humankind's past, obtained by hunting and gathering i.e. meats, fish, fruits, vegetables, nuts and seeds. People who follow a paleo diet believe that using less refined ingredients is more beneficial for health and is better tolerated by people with dietary intolerances. A paleo diet limits foods that were commonly utilised as civilisation became established and larger scale farming practices emerged. These foods include dairy products, legumes and grains.

Although this means that conventional bakery ingredients are generally not used (such as gluten forming flours and products that contain dairy), thankfully mother nature has provided for us to still be able to develop a variety of delicious tasting bakery items with a unique twist. The 'flours' we use are typically finely crushed nuts or seeds to resemble and take on similar properties of traditional flour.

Rather than using refined sugars, honey, pure maple syrup or coconut sugar can be used. As such the ingredients we use that would otherwise have dairy in them usually contain oil from a nut or seed such as almond oil or coconut oil. We make every effort to ensure that our ingredients are paleo sourced before production and that we stay within the paleo guidelines.
